You can now set up new mailboxes on iPhone/iPad easily. Download and install an iOS profile for the new mailbox, enter the password, then the incoming/outgoing IMAP/SMTP servers will be pre-configured.
Profiles can be downloaded via Email Accounts > Options > Account Setup.
